The cuisine of Sperlonga is superb.
It starts with the freshest local ingredients - fish caught that very morning, melt-in-your-mouth mozerella delivered no less than three times a day, arugula peppery and fragrant.
We are thrilled that Tim Nichols has published Just Add Friends: Recipes from a Mediterranean Table a cookbook devoted to our local cuisine.
The author grew up in Rome where his father was a correspondent for The Times and his family summered in Sperlonga.
Mr. Nichols has a deep love of Sperlonga and the food we eat here.
The recipies are written in English with great care and an obvious passion for the sujbect.
A sample recipie to whet your appitite:



Spaghetti with Anchovies
(SERVES 4)

Anchovies are found in abundance in the sea around Sperlonga and are often used as the primary ingredient in many dishes:

400 grams of spaghetti
250 grams of anchovies cleaned and boned
3 tablespoons of virgin olive oil
2 garlic cloves finely chopped
150 grams of cherry tomatoes
Chilies to taste
25 grams finely chopped parsley

Copertina libro ricette sperlongane Place a large pan of water to boil. Pour oil into a large frying pan. Add the chopped garlic and fry gently until golden brown. Add the anchovies and wine. Cook gently until the wine has evaporated. Chop the tomatoes in half and add to the pan. Add chilies to taste. Drain the pasta when cooked al dente. Add pasta to the frying pan. Cook gently for 4-5 minutes folding the pasta into the sauce. Serve with a sprinkling of parsley.
Delicious served with Moscato di Terracina a crisp local white wine.
